A third generation chef of Spanish and Italian descent, and hailing from Paris, France, Christophe's restaurant career began at 17 in the kitchen of his father's restaurant in Pasadena when they first emigrated to the USA.
Upon returning to Southern California in 2011, Christophe spent 8 years as the Managing Partner of Eddie V's Prime Seafood in La Jolla. Here he deepened his knowledge of sourcing and cooking the freshest seafood available, while delivering world class service.
Today, Christophe returns to his roots in the kitchen as the Executive Chef and Owner of Cevasco's in old Del Mar. The laid back coastal vibe of Del Mar, combined with the attention to detail from Christophe's fine dining background, infuses Cevasco's with an easy elegance that elevates any gathering, and makes the perfect backdrop to showcase his Modern Italian menu.
Vino Carta is a neighborhood wine shop and bar located in Solana Beach. We focus on small, family-run producers and natural wines made through organic and sustainable farming practices. Our retail shop offers hundreds of bottles from around the world, available to-go or to be enjoyed in our bar. In addition to wine we have a highly curated selection of craft beer, cider, and kombucha. Our wine bar has an expansive, dynamic list of natural wines offered by the glass and by the bottle. Here we host seasonal releases, weekly thematic flights, winemaker visits, and an ever changing list designed to consistently offer fresh offerings from around the globe. Additionally we have a rotating draft list of craft beer.
